Description

This Hutterite Banana Bread is soft, moist, and brimming with sweet banana flavor—perfect for breakfast or a snack.


Ingredients

  • 1¾ cups (220 g) all-purpose flour, sifted
  • 2 tsp baking powder
  • ¼ tsp baking soda
  • ¾ tsp salt
  • ⅓ cup (75 g) shortening or butter, room temperature
  • ⅔ cup (135 g) granulated sugar
  • 2 large eggs, beaten
  • 1 cup mashed overripe bananas (about 23 bananas)

Instructions

  1. Preheat oven to 350 °F (175 °C). Grease or line a 9×5 inch loaf pan with parchment paper.
  2. In a large bowl, sift together flour, baking powder, baking soda, and salt. Set aside.
  3. In another bowl, cream the shortening (or butter) and sugar until light and fluffy, about 2 minutes.
  4. Stir in the beaten eggs until fully incorporated.
  5. Fold in the mashed bananas until no large lumps remain.
  6. Gradually add the dry ingredients to the wet mixture in two parts, stirring gently until just combined. Do not over-mix.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 40–45 minutes or until a toothpick inserted in the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Serve with morning coffee or tea, cream cheese, fresh fruit, or crumbled over yogurt for a twist.
