- 3 very ripe bananas, mashed (about 1 1/2 cups)
- 1/3 cup melted unsalted butter
- 1/2 cup honey
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon (optional)
Instructions
- Preheat oven to 350°F (175°C) and grease or line a 9×5 inch loaf pan with parchment paper.
- Mash the bananas in a large bowl until mostly smooth.
- Add melted butter, honey, eggs, and vanilla extract. Whisk until well combined.
- In another bowl, whisk flour, baking soda, salt, and cinnamon.
- Gradually fold dry ingredients into the wet mixture until just combined. Do not overmix.
- Pour batter into the prepared loaf pan and spread evenly.
- Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean or with moist crumbs.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Slice and serve.
Notes
For extra flavor, add chopped nuts or chocolate chips to the batter. Make sure not to overmix to keep the bread tender.
