Healthy Strawberry Oatmeal Bars are a wholesome and irresistible snack made with the fruity sweetness of strawberries and the hearty goodness of oats. Perfect for a quick snack or a guilt-free dessert!

- 2 cups Gluten-Free Rolled Oats
- 1 cup Almond Flour
- 1/2 cup Coconut Sugar
- 1/4 cup Melted Coconut Oil
- 1/4 cup Almond Butter
- 1 tsp Vanilla Extract
- 1/2 tsp Baking Powder
- 1/4 tsp Salt
- 2 cups Fresh Strawberries (sliced or diced)
- 2 tbsp Chia Seeds
- 1 tbsp Lemon Juice
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving overhang for easy removal.
- In a large bowl, combine oats, almond flour, coconut sugar, baking powder, and salt.
- Add melted coconut oil, almond butter, and vanilla extract. Stir until a crumbly dough forms.
- In another bowl, combine strawberries, chia seeds, and lemon juice. Let sit for 10 minutes.
- Press half of the oat mixture into the prepared pan to form a base.
- Spread strawberry filling evenly over the base.
- Crumble remaining oat mixture on top and gently press down.
- Bake for 30–35 minutes, until golden brown and set.
- Cool completely before lifting out with parchment. Cut into squares or bars.
Notes
Use fresh strawberries for best flavor, but thawed and drained frozen ones can also be used.
