Description

Healthy Strawberry Oatmeal Bars are a wholesome and irresistible snack made with the fruity sweetness of strawberries and the hearty goodness of oats. Perfect for a quick snack or a guilt-free dessert!


Ingredients

  • 2 cups Gluten-Free Rolled Oats
  • 1 cup Almond Flour
  • 1/2 cup Coconut Sugar
  • 1/4 cup Melted Coconut Oil
  • 1/4 cup Almond Butter
  • 1 tsp Vanilla Extract
  • 1/2 tsp Baking Powder
  • 1/4 tsp Salt
  • 2 cups Fresh Strawberries (sliced or diced)
  • 2 tbsp Chia Seeds
  • 1 tbsp Lemon Juice

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving overhang for easy removal.
  2. In a large bowl, combine oats, almond flour, coconut sugar, baking powder, and salt.
  3. Add melted coconut oil, almond butter, and vanilla extract. Stir until a crumbly dough forms.
  4. In another bowl, combine strawberries, chia seeds, and lemon juice. Let sit for 10 minutes.
  5. Press half of the oat mixture into the prepared pan to form a base.
  6. Spread strawberry filling evenly over the base.
  7. Crumble remaining oat mixture on top and gently press down.
  8. Bake for 30–35 minutes, until golden brown and set.
  9. Cool completely before lifting out with parchment. Cut into squares or bars.

Notes

Use fresh strawberries for best flavor, but thawed and drained frozen ones can also be used.
