These Fudgy Chewy Brookies are the ultimate mashup of rich, fudgy brownies and chewy, buttery chocolate chip cookies. A decadent treat ready in about 40 minutes!

- For the Brownie Layer:
- 1/2 cup (1 stick) unsalted butter, melted
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 2 large eggs
- 1/2 cup all-purpose flour
- For the Chocolate Chip Cookie Layer:
- 1/2 cup (1 stick) unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 cup packed light brown sugar
- 1 teaspoon vanilla extract
- 1 large egg
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan or line with parchment paper.
- In a medium bowl, combine melted butter, granulated sugar, cocoa powder, and salt. Mix well until smooth.
- Stir in vanilla extract, then add eggs one at a time, mixing well after each.
- Gradually add flour and mix until just combined. Pour brownie batter into prepared pan and spread evenly.
- In another bowl, cream softened butter, granulated sugar, and brown sugar until light and fluffy.
- Mix in vanilla extract and egg until well combined.
- Whisk flour, baking soda, and salt together in a separate bowl. Gradually add to wet mixture until just combined.
- Stir in chocolate chips.
- Drop spoonfuls of cookie dough over brownie batter, leaving gaps.
- Bake 30–35 minutes until cookie layer is golden and toothpick comes out with moist crumbs from brownie layer.
- Cool completely before cutting. Chill for cleaner cuts if desired.
Notes
Start checking doneness at 30 minutes as ovens may vary. These brookies taste amazing both warm and at room temperature.
