Instructions

  1. Preheat and Prep: Preheat your oven to 350°F (175°C). Line a large baking sheet (approximately 13×18 inches) with parchment paper or a silicone baking mat. Arrange the saltine crackers in a single layer on the prepared baking sheet, fitting them as snugly as possible without overlapping.
  2. Make the Toffee: In a medium saucepan, combine the unsalted butter and packed light brown sugar. Place the saucepan over medium heat, stirring occasionally, until the butter is completely melted and the sugar has dissolved. Bring the mixture to a rolling boil, stirring constantly, and continue to boil for exactly 3 minutes. Remove from heat and stir in the vanilla extract and salt (if using).
  3. Pour and Bake: Carefully pour the hot toffee mixture evenly over the arranged saltine crackers, ensuring all crackers are coated. Use an offset spatula or the back of a spoon to gently spread. Place the baking sheet in the preheated oven and bake for 5-7 minutes. Keep a close eye on it to prevent burning; the toffee will bubble and darken.
