Description

A delightful blend of earthy wild rice, sweet cranberries, and crunchy pecans, making it a versatile and flavorful addition to any menu.

Ingredients

Scale
  • 1 cup wild rice blend
  • 2 cups vegetable or chicken broth
  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1/2 cup dried cranberries
  • 1/2 cup chopped pecans, toasted
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons butter or olive oil (optional, for extra richness)
  • Salt and pepper to taste
  • Optional: 1/4 cup orange juice or zest for brightness

Instructions

  1. Rinse the rice: Place the wild rice blend in a fine-mesh sieve and rinse thoroughly under cold water until the water runs clear.
  2. Cook the rice: In a medium saucepan, combine the rinsed wild rice blend with 2 cups of vegetable or chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 45-50 minutes.
  3. Sauté the vegetables: Heat olive oil in a skillet, add onion and celery, and sauté for 5-7 minutes.
  4. Combine and finish: Add the cooked rice to the skillet with vegetables. Stir in cranberries, pecans, and parsley.
  5. Add richness (optional): Stir in butter or olive oil.
  6. Season to taste: Season with salt, pepper, and optional orange juice or zest.
  7. Serve: Serve warm as a side dish.

Notes

Toasting the pecans enhances their flavor. Use high-quality broth for the best taste. Adjust sweetness to your preference.
