Instructions
- Rinse the rice: Place the wild rice blend in a fine-mesh sieve and rinse thoroughly under cold water until the water runs clear.
- Cook the rice: In a medium saucepan, combine the rinsed wild rice blend with 2 cups of vegetable or chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 45-50 minutes.
- Sauté the vegetables: Heat olive oil in a skillet, add onion and celery, and sauté for 5-7 minutes.
- Combine and finish: Add the cooked rice to the skillet with vegetables. Stir in cranberries, pecans, and parsley.
