Description

Cinnamon Swirl Banana Bread is a moist, sweet banana bread with a delicious ribbon of cinnamon-sugar that winds through the loaf, creating a warm swirl of flavor in every bite.


Ingredients

  • 3 medium ripe bananas, mashed
  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar, divided
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 tablespoons cinnamon
  • 1/4 cup brown sugar

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan or line with parchment paper.
  2. Mash ripe bananas in a large bowl until mostly smooth.
  3. Add softened butter and 1/2 cup granulated sugar to bananas. Cream until light and fluffy.
  4. Beat in eggs one at a time, then stir in vanilla extract.
  5. In a small bowl, whisk together flour, baking soda, and salt.
  6. Gradually add dry ingredients to wet mixture, stirring until just combined.
  7. In another bowl, combine remaining 1/4 cup granulated sugar, brown sugar, and cinnamon.
  8. Pour half the batter into prepared loaf pan. Sprinkle half of the cinnamon-sugar mixture on top.
  9. Add remaining batter, then sprinkle remaining cinnamon-sugar mixture on top.
  10. Swirl mixture gently with a knife to create a marbled effect.
  11. Bake for 50–60 minutes, or until a skewer inserted in the center comes out clean.
  12. Cool in pan for 10 minutes, then transfer to wire rack to cool completely before slicing.

Notes

If the top browns too quickly, tent loosely with foil during the last 15–20 minutes of baking. Use very ripe bananas for the best sweetness and flavor.
