  • 2 Large Eggs
  • 1 teaspoon Vanilla Extract
  • 1 cup (240ml) Buttermilk
  • 3 medium-sized Pears (Bosc or Anjou), peeled, cored, and diced
  • **Optional Topping**:
    • ¼ cup (50g) Granulated Sugar
    • 1 teaspoon Ground Cinnamon
    • ½ cup (50g) Chopped Walnuts or Pecans

Instructions

  1. **Prepare Your Workspace**: Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan, or line it with parchment paper for easy removal.
  2. **Combine Dry Ingredients**: In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg, optional ground cloves, and salt. Set this aside.
  3. **Cream Butter and Sugars**: In a large mixing bowl, using an electric mixer, cream together the softened unsalted butter, granulated sugar, and packed light brown sugar until the mixture is light and fluffy (about 2-3 minutes).
  4. **Add Eggs and Vanilla**: Beat in the large eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the vanilla extract.
  5. **Alternate Dry and Wet Ingredients**: Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined; do not overmix.
  6. **Fold in Pears**: Gently fold in the diced pears until they are evenly distributed throughout the batter.
  7. **Optional Topping (If Using)**: In a small bowl, combine the ¼ cup granulated sugar, 1 teaspoon ground cinnamon, and chopped walnuts or pecans. Sprinkle this mixture evenly over the top of the batter.
  8. **Bake**: Pour the cake batter into the prepared baking pan and spread it evenly. Bake for 45-50 minutes, or until a wooden skewer or toothpick inserted into the center of the cake comes out clean.
