- 1 teaspoon baking soda
- 1 teaspoon baking powder

- 2 large eggs
- ¾ cup vegetable oil
- 2 cups granulated sugar
- 1 teaspoon vanilla extract
- 2 cups peeled, cored, and diced apples (Granny Smith or Honeycrisp)
- 1 cup caramel bits
- 2 tbsp heavy cream or milk (for caramel drizzle)
- ½ cup caramel sauce (for drizzling on top)
Instructions
- Preheat your oven to 350°F (175°C) and grease/flour a 9×5 inch loaf pan.
- In a large bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- In a separate bowl, beat eggs, vegetable oil, sugar, and vanilla extract until well combined.
- Gradually add wet mixture into dry mixture, stirring until just combined. Do not overmix.
- Gently fold in diced apples and caramel bits.
- Pour batter into prepared loaf pan and spread evenly.
- Bake for 50-60 minutes or until a skewer comes out clean. Begin checking around 45 minutes.
- Let the loaf cool in the pan for 10 minutes, then transfer to wire rack to cool completely.
- For caramel drizzle: melt caramel sauce in microwave in 30-second bursts, stir in 2 tbsp cream or milk until smooth and pourable.
- Drizzle over cooled loaf, slice, and enjoy!
