Description

Think banana bread had a baby with coffee cake, and that baby won the lottery in the form of extra butter. This simple cake is perfect for a breakfast with friends or a relaxing dessert after dinner. Moist, banana-infused, and topped with a buttery crumb – it’s a dream come true!


Ingredients

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup (1 stick) unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup mashed ripe bananas (about 23 medium bananas)
  • ½ cup sour cream or plain yogurt
  • For the Crumb Topping:
  • ½ cup all-purpose flour
  • ⅓ cup packed light brown sugar
  • ¼ cup granulated sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 6 tablespoons (3 ounces) cold unsalted butter, cut into small cubes

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch square baking pan.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, and salt.
  3. Cream butter and granulated sugar until light and fluffy.
  4. Beat in eggs one at a time, then stir in vanilla extract.
  5. Gradually add dry ingredients, alternating with mashed bananas and sour cream. Mix until just combined.
  6. For crumb topping, mix flour, brown sugar, granulated sugar, cinnamon, and salt in a bowl.
  7. Cut in cold butter until mixture resembles coarse crumbs.
  8. Pour batter into prepared pan and sprinkle crumb topping evenly over it.
  9. Bake 35-40 minutes, or until a toothpick inserted in the center comes out clean.
  10. Cool 10 minutes in the pan before transferring to a wire rack. Cut into squares and serve.

Notes

Use very ripe bananas for maximum flavor. Don’t overmix the batter to keep the cake tender.
