  • 5 tablespoons unsalted butter, melted
  • ¼ cup granulated sugar
  • 32 ounces cream cheese, softened
  • 1 ½ cups granulated sugar
  • ½ cup sour cream
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • ¼ teaspoon ground cinnamon
  • 4 medium apples, peeled, cored, and diced
  • ¼ cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ cup all-purpose flour
  • ½ cup rolled oats
  • ½ cup packed brown sugar
  • ½ cup unsalted butter, cold and cubed

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix graham cracker crumbs, melted butter, and ¼ cup sugar. Press into a 9-inch springform pan. Bake 8–10 minutes, then cool.
  3. Toss apples with ¼ cup sugar, 2 tablespoons flour, cinnamon, and nutmeg. Set aside.
  4. Combine ½ cup flour, oats, brown sugar, and cold butter. Cut butter into mixture until coarse crumbs form.
  5. Beat cream cheese until smooth. Add 1 ½ cups sugar, then sour cream, eggs (one at a time), vanilla, and cinnamon. Mix just until combined.
  6. Pour cheesecake filling over crust. Top with apples, then sprinkle with crumble topping.
  7. Bake 55–65 minutes, until edges are set and center is slightly jiggly.
  8. Turn oven off, cool in oven with door ajar for 1 hour. Cool completely, then refrigerate 4+ hours or overnight.
  9. Remove springform pan sides, slice, and serve.

Notes

For best flavor, use tart apples like Granny Smith or Honeycrisp. Chill overnight for the creamiest texture.
