- ½ cup all-purpose flour
- ½ cup rolled oats
- ½ cup packed brown sugar
- ½ cup unsalted butter, cold and cubed
Instructions
- Preheat oven to 350°F (175°C).
- Mix graham cracker crumbs, melted butter, and ¼ cup sugar. Press into a 9-inch springform pan. Bake 8–10 minutes, then cool.
- Toss apples with ¼ cup sugar, 2 tablespoons flour, cinnamon, and nutmeg. Set aside.
- Combine ½ cup flour, oats, brown sugar, and cold butter. Cut butter into mixture until coarse crumbs form.
- Beat cream cheese until smooth. Add 1 ½ cups sugar, then sour cream, eggs (one at a time), vanilla, and cinnamon. Mix just until combined.
- Pour cheesecake filling over crust. Top with apples, then sprinkle with crumble topping.
- Bake 55–65 minutes, until edges are set and center is slightly jiggly.
- Turn oven off, cool in oven with door ajar for 1 hour. Cool completely, then refrigerate 4+ hours or overnight.
- Remove springform pan sides, slice, and serve.
Notes
For best flavor, use tart apples like Granny Smith or Honeycrisp. Chill overnight for the creamiest texture.
