- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups peeled and diced apples
- 1/2 cup chopped walnuts or pecans (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
- In a large bowl, whisk together flour, baking soda, cinnamon, nutmeg, cloves, and salt.
- In another bowl, whisk sugar, oil, eggs, and vanilla until smooth.
- Gradually combine wet and dry ingredients, mixing until just combined.
- Fold in apples and nuts (if using).
- Pour batter into prepared loaf pan.
- Bake 50-60 minutes, checking at 50 minutes, until a skewer inserted comes out clean.
- Cool in pan 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Use sweet-tart apple varieties like Honeycrisp, Gala, or Fuji for best flavor. Avoid overmixing to keep the bread tender.
