- ½ cup (1 stick) cold unsalted butter, cut into cubes

- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1 unbaked 9-inch pie crust
Instructions
- In a large bowl, combine flour, brown sugar, and cinnamon. Add cold butter and cut into the mixture until it resembles coarse crumbs. Set aside.
- In a separate bowl, whisk together egg and molasses until well combined.
- In a heatproof measuring cup, pour boiling water over baking soda. Stir until dissolved.
- Carefully pour soda mixture into molasses mixture. Add vanilla extract and stir until combined.
- Pour filling into unbaked pie crust. Sprinkle crumb topping evenly over the filling.
- Preheat oven to 375°F (190°C). Bake for 45–50 minutes, until topping is golden and filling is set around edges.
- Cool completely on a wire rack before slicing. Enjoy!
Notes
Use cold butter for the crumb topping to keep it crumbly. Don’t overmix the filling to avoid toughness. If browning too quickly, cover loosely with foil. Use dark molasses for richer flavor.
