Description

A silky, soul-warming soup rooted in Pennsylvania Dutch tradition—made with whole milk, butter, and flour for a simple yet timeless flavor.

Ingredients

Scale
  • 4 cups whole milk
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • ½ teaspoon salt
  • Optional: pinch of nutmeg

Instructions

  1. In a medium saucepan over low heat, melt the butter.
  2. Whisk in the flour and stir continuously for 1–2 minutes to form a smooth roux.
  3. Gradually add the milk while whisking to avoid lumps.
  4. Stir in salt and optional nutmeg. Bring to a gentle simmer over medium-low heat.
  5. Cook for 5–7 minutes, stirring often, until slightly thickened.
  6. Remove from heat and serve warm. Optionally garnish with cracked black pepper or chives.

Notes

Use fresh, high-quality milk for best flavor. Stir constantly while heating to avoid curdling. Not recommended for freezing as texture may change.
