Description
A refreshing, naturally sweetened mint tea straight from the Amish countryside. Light, crisp, and perfect for summer days.
Ingredients

- 1 large bunch fresh mint (about 1–2 cups loosely packed leaves), rinsed
- 8 cups water
- 1/2 cup sugar, or to taste
- Optional: Lemon slices and a squeeze of lemon juice for garnish
Instructions
- Rinse the mint thoroughly and shake off excess water.
- (Optional) Lightly muddle the mint in a large pitcher or pot with a wooden spoon to release oils.
- Add 8 cups of water to the pitcher or pot with the mint.
- Cover and let sit at room temperature for 30 minutes to 1 hour to infuse.
- Strain the tea using a fine-mesh sieve or cheesecloth to remove the mint leaves.
- Stir in sugar while tea is still warm until fully dissolved. Add lemon juice if desired.
- Chill in the refrigerator for at least 1 hour.
- Serve over ice with lemon slices and fresh mint sprigs.
Notes
Adjust sugar and steeping time to taste. Spearmint is traditional, but peppermint works too for a stronger flavor.
