Description
A hearty, make-ahead Amish breakfast casserole packed with eggs, sausage, bread, and cheese – perfect for busy mornings or brunch gatherings.

- 1 pound breakfast sausage, cooked and crumbled
- 6 large eggs
- 1 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 6 slices bread, cubed and slightly dried
- 2 cups shredded cheddar cheese
- 1/4 cup chopped green bell pepper (optional)
- 1/4 cup chopped onion (optional)
Instructions
- In a skillet, cook the sausage over medium heat until browned and crumbled. Drain excess grease.
- Grease a 9×13 inch baking dish with cooking spray.
- In a large bowl, whisk together the eggs, milk, salt, and pepper.
- Spread cubed bread evenly in the prepared baking dish.
- Sprinkle cooked sausage, green bell pepper, and onion (if using) over the bread.
- Top with shredded cheddar cheese.
- Pour the egg mixture evenly over all ingredients. Gently press the bread into the mixture.
- Optional: Cover and refrigerate for at least 2 hours or overnight.
- Preheat oven to 350°F (175°C). If chilled, remove from refrigerator 30 minutes before baking.
- Bake uncovered for 45–50 minutes, until golden and set. Knife inserted should come out clean.
- Let cool slightly before slicing and serving.
Notes
Use slightly stale bread for best texture. Customize with vegetables or cheese varieties. Can be prepped ahead and frozen in portions for later use.
