Ingredients

  • 23 pounds beef chuck, cut into 1-inch cubes
  • 1 pound egg noodles (wide or medium)
  • 8 cups low-sodium beef broth
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 stalks celery, chopped
  • 2 medium carrots, chopped
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt, to taste
  • Pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large Dutch oven over medium-high heat. Season beef cubes with salt and pepper. Sear in batches, browning all sides for 2-3 minutes per side. Remove and set aside.
  2. Add onion, celery, and carrots to the pot. Sauté over medium heat until softened, about 5-7 minutes. Add minced garlic and cook for 1 minute more.
  3. Sprinkle flour over vegetables and stir constantly for 1-2 minutes. Slowly add beef broth, stirring to avoid lumps. Stir in Worcestershire sauce, thyme, rosemary, and bay leaf.
  4. Return seared beef to the pot. Bring to a simmer, then cover and cook on low for 2 hours, or until beef is fork-tender. Add broth if needed.
  5. About 30 minutes before serving, cook egg noodles in salted water until al dente. Drain well.
  6. Remove bay leaf from pot. Stir in drained noodles. Adjust seasoning with salt and pepper. Simmer briefly to meld flavors. Garnish with chopped parsley and serve.

Notes

Searing the beef builds flavor – don’t skip it! For extra creaminess, stir in a splash of cream before serving. Can be frozen, but note noodles may soften slightly upon reheating.
